Roll Cake Recipe
Ingredients:
Cake
· 60 g Chocolate Casein protein powder
· 30 g cocoa powder
· 16 g coconut flour
· 10 g baking powder
· 5 g stevia
· 140 g plain non fat Greek yogurt
· 140 g unsweetened apple sauce
· 150 g egg whites
Frosting
· 113 g reduced fat cream cheese (softened)
· 113 g plain non fat Greek yogurt
· 10 g (or to taste) sugar free/fat free pudding mix (flavor of your choice!)
Steps:
1. Preheat oven to 350 degrees. Mix the dry cake ingredients, add in the wet ingredients and mix well.
2. Spray parchment paper on a cookie sheet and spread the batter out. The batter doesn’t have to cover the whole sheet. Bake for 15 minutes.
3. Once slightly cooled flip cake onto a clean kitchen towel and roll up, leave the cake rolled until cooled.
4. To make the frosting mix (I recommend using an electric mixer) the ingredients together until smooth.
5. Unroll cake and spread the frosting, leaving the outside edge unfrosted. Reroll the cake and ENJOY!!
