Gingerbread Cookies

Gingerbread Cookies (makes 36)

 

Ingredients:

1 cup butter

¼-1/2 cup stevia (sweetener of choice)

1 cup molasses
1 egg

2 tbsp apple cider or white vinegar

1 ¾ (224 g) cup flour

330 g casein protein powder (I used a mix of vanilla and chocolate)

2 tsp ground ginger

2 tsp cinnamon

1 tsp cloves

½ tsp salt

1 ½ tsp baking soda

 

Steps:

1.       Cream butter and stevia

2.       Add molasses, egg and vinegar and mix

3.       Sift dry ingredients and mix into wet

4.       Flatten and wrap in plastic wrap, refrigerate for about 30-60 minutes (or freezer for 10-15)

5.       Preheat oven to 350 degrees. Roll to 1/3 inch thick, cut out shapes, bake on parchment paper/ sprayed baking sheet for 6-8 minutes.

Nutrition: 114 calories, 5.5 g fat, 12 g carbs, 5.3 g sugar, 7 g protein
