French Toast Cupcakes

INGREDIENTS:

1 piece light bread

60 g egg whites

Cinnamon

Sweetener of choice

Vanilla extract

STEPS:

1. Preheat oven to 350 degrees. Cut up bread into smaller chunks. Add to sprayed muffin tin.

2. Mix egg whites, sweetener, cinnamon and vanilla in a measuring up. Pour over bread. Press bread into the liquid mix to soak it completely. Can repeat to make whole cupcake tin.

3. Bake for 20 minutes and enjoy! Will keep in fridge for quick grab and go breakfast. I like to top mine with syrup and cookie/nut butters.
