Greek Yogurt Cheesecake
INGREDIENTS:
28 g low fat cream cheese
Stevia (I never measure it, to taste, about 1 cup)
908 g non fat plain Greek yogurt
3 eggs
1 tsp vanilla extract
2 tbsp cornstarch
STEPS:
1. Pre-heat oven to 350 degrees. Cream the cream cheese, add some (1/4 cup or so) sweetener and let them blend together
2. Mix in yogurt. After that has mixed add in one egg at a time. Then add vanilla. Lastly add the cornstarch.
3. Spray an 8 inch spring-form pan with non-stick spray. Add batter and bake 25-35 minutes. The center will still be a bit jiggly but will finish cooking while it cools. You want the top to feel semi-firm when you touch it.
