Breakfast Burrito

Ingredients:

•2 whole eggs

•2 turkey breakfast sausages

•28 g low fat/fat free cheddar cheese 

•1 low carb tortilla (I use La Banderita carb counter)

•optional toppings: salsa, beans, sautéed peppers and onions 


Directions:

  1. Cut sausages into pieces. Cook in sprayed pan (medium to medium high heat).

  2. Move sausage to side of pan and add eggs, sunny side up.

  3. Top eggs with cheese and cover- only for a minute or two or the yolks will overcook

  4. Microwave tortilla for 30 seconds and add eggs on top. Fold Burrito, roll up your sleeves cause this is a messy one! And enjoy!
