Double Blueberry Protein Pancakes

INGREDIENTS:

  • 30 g casein protein powder

  • 40 g bisquick

  • 46 g egg whites

  • Water to pancake batter consistency

  • Blueberries (frozen is fine!)

STEPS:

  1. Mix all ingredients, adding blueberries last (save some for topping). You want the batter to be pretty thick.

  2. Spray pan with cooking spray, heat on medium-high. Once pan is hot add batter to desired size. When bubbles start appearing on up side of pancakes, flip. After a minute or two they will be done.

  3. In a separate pan, spray with cooking spray and add blueberries for topping. Cook on medium high, add some water and stevia and mix them until they get to a soft jam like consistency

  4. Top pancakes with blueberries and ENJOY!
